Specialist Producers of Organic Lamb and Mutton

Wickham Manor is a 750-acre National Trust Organic farm run by Mason and Sally Palmer. Being entirely organic the livestock and crops are produced without the use of pesticides or artificial fertilisers. The farm is also in the Countryside Stewardship Scheme, so nature conservation is of great importance and is home to many species of wildlife such as badgers, rabbits, foxes, swans and herons.

The animal feed is home grown and the sheep graze the ancient pastures on the hills around Winchelsea, which date back to medieval times. These contain many herbs and grass species which are not found in modern grasslands, and these contribute to the distinctive flavour of the lamb.
 
The sheep are home bred from our pedigree flock of Lleyn ewes which are crossed with top quality Hampshire Down rams. These native breeds have long been recognised for the outstanding quality of their meat. This has a fine texture and does not tend to dry out when cooked but stays succulent and juicy. 

All our lambs are processed locally, keeping transportation and consequent stress to a minimum.
